Vegan Butter Swim Biscuits

I came across a recipe in the NYT the other day for something called–rather temptingly–“Butter Swim Biscuits.”

Since we’re up at the cabin now and I have lots of room to make a mess, I figured I’d take a stab at veganizing the recipe. The result is suprisingly sumptous! I subbed oatmilk and vinegar for buttermilk and plant-based butter for regular butter, which I mentioned to Biddy, who said, “Imagine how great the biscuits would be with NO substitutions!” I sense she will be making them soon.

Vegan Butter Swim Biscuits

First, preheat the oven to 450 degrees.

Next, mix together and let sit for a few minutes:

  • 1 2/3 cups oatmilk (or other plant milk)
  • 2 TBS white vinegar

Next, place the following in cubes in a square 9×9-inch pyrex baking dish and place in the oven until melted (5 or 6 minutes):

  • 114 grams plant-based butter

Next, mix together in a large bowl:

  • 300 grams AP flour
  • 16 grams baking powder
  • 12 grams sugar
  • 6 grams sea salt

Add the curdled oatmilk to the bowl and mix until just mixed (no flour is evident) and let the mixture sit for ten minutes.

Remove the pyrex dish from the oven, and transfer the batter to the dish. Spread the batter evenly with a spatula–the butter will rise to the top as you do. Using a sharp knife, cut the batter into 9 equal-size squares. 

Bake for about 25 minutes, rotating the pan halfway through, until an internal temperature of 210 is achieved.

Biscuits right out of the oven and still bubbling!

Allow the biscuits to cool for about 3 minutes; they will soak up the butter bubbling in the bottom of the dish. Run a knife along the sides and through the cuts, then serve with more plant-based butter and jam!

It seems significant that this song was playing this morning as I wrote this post because just last night we were talking about how important it is to be brave enough to take those leaps of faith when the universe offers you a gift.
