Our Own Little Cocktail Party….

So I wanted to try another Thug Kitchen recipe–Roasted Sriracha Cauliflower Bites with Peanut Sauce, buuuuut it seemed more of a kind of cocktail party recipe than a dinner recipe. However, I knew if we had it as a snack, we wouldn’t be able to eat dinner, so I solved the problem by adding some hummus and raw vegetables. So our meal was basically a deconstructed bowl (bean, green, grain) without the grain. Anyway, our little cocktail party was delightful, but I have no doubt that J will be making a sandwich by seven thirty. Here’s the recipe direct from Thug Kitchen: Roasted Sriracha Cauliflower Bites with Peanut Sauce. I had only one pound of cauliflower, however, and the recipe calls for two, so I used a pound of broccoli as well, which was very nice. I’ve made Sriracha-Roasted Broccoli before (and posted the recipe here!), so I knew it would taste good….and it did!  It was all quite delicious, but I expected the cauliflower to be crisper. I kept putting it back in the oven to get it to crisp up, but even so, it was a bit floppy. It tasted awesome though, and the peanut sauce was so good that even J (an inveterate hater of peanut anything) liked it.
