Crispy Vegan Toasties!

I’m such a sucker for any kind of toasted sammie, so when Jamie Oliver popped up on my Instagram making a ham and cheese toastie in just a few minutes, I was game to make a vegan version. Not quite a quesadilla, not quite a savoury pancake, Jamie’s toastie is exceptionally crisp.

So…here’s my veganized version!

Crispy Vegan Toasties

Step 1: Prepare your fillings. I decided on chopped grape tomatoes, spinach, onions, kalamata olives, and a couple of pre-cooked pieces of Yves vegan bacon.

Step 2: Heat your pan to medium and add…

  • 1 TBS vegan butter or olive oil

You CAN just spray the pan with a light spritz of oil, but the result won’t be very crispy–still delicious, just not crispy.

Step 3: Whisk together well in a large measuring cup….

  • 1/4 cup flour
  • 1/8 tsp salt
  • 1 tsp baking powder
  • 1 TBS vegan yogurt
  • 1/4 cup plus 1 TBS water

Step 4: Pour batter into hot pan and quickly spread into a thin circle…

Step 5: Once the edges are bubbling, add your fillings to one side only…

Step 6: Flip the empty side over the fillings, turn down the heat, and let heat through for two minutes. Flip and let heat through for two more minutes.

And there you go! Slice in half and serve! The toastie is deliciously crispy and incredibly fast.
