I have a vague recollection of something called “Spanish Rice” from my childhood. For a few years, it was part of the weekly repertoire…a repertoire that changed many times over the years: Friday fish sticks went by the wayside after Vatican II, as did Spanish Rice (though it was more a casualty of frequent protests than Vatican II). I saw a recipe this morning for a vegan version, however, and thought I’d give it a try. It turned out to be rather lovely, and we’ll be having it for dinner this evening–topped with a healthy sprinking of cilantro, a few sliced jalapenos, and a dollop of salsa. Here’s the link.
