These are the ingredients for the (surprisingly) good bowl I made yesterday:
Salsa, Vegan “Cheese Sauce,” Refried Black Beans, Chopped Cilantro, Chopped Kalamata Olives, Sliced Serrano Peppers, Green Onions, Romaine Lettuce, Roma Tomatoes.
All layered over a very thin layer of fat-free hash browns and onions:
It kind of looks like a mess, but it’s delicious…
And the final assembly just looks like a salad:
I thought it would be too filling, but, surprisingly, it’s not. Indeed, J made a sandwich afterwards (as is his wont with the vegan meals).
